Fermentn Home Fermentation Kit instructions

Ferment'n Classic Dill Pickles Recipe

Prep time: approximately 30 minutes
Fermenting time: 7-10 days
Ingredients:

  • 2.5 tablespoons of sea salt
  • 1 quart chlorine-free water (ideally but not necessary)
  • 2-3 grape, oak, horseradish leaves, or a couple black tea bags
  • 3-4 cloves garlic, peeled (depending on how spicy you like your pickles)
  • 1 large head of dill
  • Additional pickling spices (have fun with this one!)
  • Enough pickling cucumbers to fill a 1-quart jar

Instructions:

  1. Make a brine by dissolving your sea salt into the water. In your jar add half the garlic, half the spices, and your tannin-containing leaves.
  2. Pack your cucumbers very tightly into the jar. Too few and there won’t be enough veggies to soak up the salt and you’ll end up with very salty pickles.
  3. Put the rest of your garlic and spices on top.
  4. Pour the brine over the pickles, leaving 1-2 inches of headspace.
  5. Place your Ferment’n Ceramic Weight on top. Veggies should be completely submerged and there should still be an inch or two of headroom.
  6. Put on your Ferment’n airlock (add water to the moat), secure with jar ring and ferment at room temperature (60 - 70°F is preferred) until desired flavor and texture are achieved (try a week or two). The brine should turn cloudy and bubbly, and the pickles should taste sour when done.
  7. When your pickles suit your taste, take off the Ferment’n airlock, put a regular lid on the jar and store in the fridge. They can last for up to 6 months!
  8. Enjoy!

Spicy Pickled Carrots Recipe

Prep time: approximately 30 minutes
Fermenting time: 7-10 days
Ingredients:

  • 1 - 1½ pounds of fresh carrots
  • 2 garlic cloves, peeled
  • 2 cups of water, or more as needed
  • 2 tablespoons of sea salt
  • 2 teaspoons dried dill, 4 if fresh
  • 1 small jalapeno, seeded

Instructions:

  1. Make brine by dissolving the sea salt in water. Heat water if necessary to dissolve salt but let cool before adding vegetables.
  2. Put your garlic cloves and jalapeno in the bottom of the jar. Quarter your carrots longways and make sure that their length is approx. 2 inches shorter than the height of the jar.
  3. Pack the carrots in vertically. Your jar should be very full, with little space between the carrots.
  4. Stir dill into brine and any other seasonings you may wish to try. Experiment! Have fun!
  5. Pour the 2 cups of brine over the carrot sticks so that they are completely covered, leaving at least 1.5″ of headspace between the brine and the lip of the jar. Add more water, if needed.
  6. Place the ceramic weight on the carrots.
  7. Place your Ferment’n airlock on the jar. Add water up to the fill-line (about halfway) and then secure in place with jar ring.
  8. Keep in a cool, dark place out of direct sunlight for a week or more. Occasionally check your ferment to make sure the water has not evaporated from the airlock- although this is generally not a problem with the Ferment’n system (as we’re sure you already know!)
  9. After a week or so, test one of your carrots- pulling it out with clean fingers or utensils. If you like the way it tastes then put the normal lid on the jar, put the jar in the fridge, and enjoy! Your carrots will be good for about 6 months or more stored in the fridge. If they’re not pickled enough for your taste, just wait a little longer.
